The Perfect, Refreshing Summer Side Dish: 3 Ingredient Potato Salad

Tis the season for fresh produce, eating outdoors, and all the cold salad side dishes! Today, I’m sharing a summer salad recipe so easy, it has less than a handful of ingredients with zero flavor compromise. Three ingredient potato salad is mayo-free so while it’s the perfect dinner side for your immediate family, you also don’t have to worry about outdoor temps if you’re prepping for a cookout. This recipe is so simple, it’s almost silly, but it’s so. dang. delish.

How to Make Potato Salad with Only Three Ingredients

While there are additions you can make, the following recipe in its pure form is a winner, all on its own. It’s totally refreshing, not too heavy, can be made in advance, and refrigerates beautifully.

Three Ingredient Potato Salad

An easy, fast potato salad side dish, perfect for summer!

Ingredients

  • 1.5 lbs new potatoes
  • 3-4 green onion stalks
  • 1/2 C champagne vinaigrette dressing

Instructions

  1. Wash potatoes and cut into bite-sized chunks.

  2. Boil potatoes in salted water until they are fork-tender. DO NOT OVER-BOIL.

  3. When the potatoes are tender, drain and set aside to cool.

  4. Place cooled potatoes in a large bowl.

  5. Dice green onions and add to potatoes.

  6. Add approximately 1/2 C champagne vinaigrette to the bowl and gently stir ingredients to coat well.

  7. Refrigerate until ready to serve; enjoy!

Simple Vinaigrette Based Potato Salad with only 3 ingredients!

Additional Potato Salad Toppings & Ingredients

I am an onion lover (to me, more is MORE — always!) so when we made this side and I had red onions on hand, I diced some and tossed them in. If you like red onions, I would 100% recommend this addition — again, not necessary, but I love it this way. Other possibilities — bacon crumbles, dill, or hard boiled egg (I don’t eat eggs but my mom likes this potato salad with some diced egg included). Our favorite champagne vinaigrette is Trader Joe’s; they were out of stock during my last visit but if you see some, grab it to try!

EASY 3 Ingredient Potato Salad Recipe

Serve it with grilled chicken, steak, burgers, or even as part of your vegetable dinner — this easy side dish is a great way to take a break from the same old veggie sides you’ve probably grown accustomed to in your regular rotation. And as always, if you try it, let me know!

    This sounds like a lighter and more refreshing change from a mayo-based one – ideal for hotter weather and lovely and straightforward! I shall have to try to home-replicate TJ’s champagne vinaigrette as I can’t get it here in the U.K. I would suggest that, as with all starch-based salads, that you try dressing the potatoes whilst they are still warm as they will absorb more flavour.

      Hi Sally, Thanks so much for taking the time to stop by! It was definitely a plus for me to have the “ready made” vinaigrette. It seemed like the three ingredients were all that really needed. I certainly appreciate your tip. I consciously waited until the potatoes had cooled so that the dressed salad would not be so tangy. You certainly sound like a phenomenal cook and I bet your dressing and the resulting salad will be delicious!
