Frozen Cranberry & Pineapple Salad

This tangy and sweet frozen fruit salad is the perfect side dish to serve with a heavy meal or with a light lunch.

Ingredients

  • 1 can whole berry cranberry sauce
  • 1 can crushed pineapple
  • 1 cup sour cream (or Greek yogurt)
  • 1/4 cup chopped pecans

Instructions

  1. Open the can of whole berry cranberry sauce and add to the mixing bowl.

  2. Open the can of crushed pineapple, drain and add to the mixing bowl.

  3. Mixed the two canned fruits together.

  4. Add 1 cup of sour cream (or Greek yogurt) to the mixing bowl.

  5. Add 1/4 cup of chopped pecans to the mixing bowl.

  6. Mix all of the ingredients together until they are well mixed.

  7. Line the baking dish with wax paper.

  8. Dump the salad mixture into the baking dish and spread the mixture out evenly.

  9. Freeze the salad for at least six hours.

  10. When you are ready to serve the salad, remove it from the freezer and cut it into squares or diamonds. For easy cutting, you can remove the entire salad from the pan and cut your portions on a cutting board. The wax paper allows for easy removal from the pan and is discarded.

Recipe Notes

It is best to remove the frozen salad from the freezer right before you are ready to serve it.

Store leftovers in the freezer.
