This Hash Brown Casserole is a true family and friends favorite! It's made up of all the good things -- potatoes, onion, cheese and more. This recipe is a wonderful side dish to go along with any meal and is a rave whenever it is served.
Pour frozen hash browns in to a large mixing bowl.
Chop onion and add to the bowl.
Add can of mushroom soup and yogurt and incorporate into the mixture.
Add melted butter, shredded cheese, salt and pepper and mix. NOTE: Do not add the melted butter until this point because it will "freeze" if added too early to the mixture.
Ladle the hash brown mixture into a baking dish.
Bake at 350 degrees for 45 minutes or until the casserole is lightly browned and bubbling.
If you would like to make the Hash Brown casserole ahead of time, refrigerate and cover after ladling the hash brown mixture into the baking dish. Prior to baking, remove the baking dish from the refrigerator ten minutes before baking in the oven. Bake at 350 degrees for 45 minutes or until the casserole is lightly browned and bubbling.
A topping of crumbled corn flakes, followed by a drizzle of melted butter (1/2 stick), may also be added to the casserole prior to baking, if you're feeling extra "fancy!"
