Easy, Moist Peach Bread

A less common fruit bread, this easy, moist peach bread is perfect for dessert, breakfast, or all on its own!

Ingredients

  • 1 C sugar
  • 1 stick of butter, softened (8 TBSP)
  • 5-6 ripe peaches
  • 2 eggs
  • 1 1/2 C all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla

Instructions

  1. Before starting, set out butter to soften

  2. Preheat oven to 350° and coat loaf pan with cooking spray

  3. Cream butter and sugar together in a mixing bowl -- using the paddle attachment with a Kitchenaid stand mixer makes this process simpler

  4. Peel peaches and remove the pit. In a separate bowl, chop and mash well. The more ripe the peaches are, the better the flavor will be.

  5. Add mashed peaches to the mixing bowl.

  6. In a separate bowl (can use the same bowl the peaches were mashed in), beat two eggs together. Add to the mixing bowl.

  7. In a separate bowl, combine flour, baking soda, and salt and add to mixing bowl.

  8. Add cinnamon and vanilla and mix until all ingredients are combined.

  9. Pour peach bread mixture into the greased loaf pan and bake for 45-55 minutes, depending on oven speed. To check if the loaf is finished, use a toothpick by placing it inside the center of the loaf. If it is clean when you pull it out, it should be finished.

  10. Enjoy! Can also be served with whipped cream or sliced on its own!
