An easy, fast potato salad side dish, perfect for summer!
Wash potatoes and cut into bite-sized chunks.
Boil potatoes in salted water until they are fork-tender. DO NOT OVER-BOIL.
When the potatoes are tender, drain and set aside to cool.
Place cooled potatoes in a large bowl.
Dice green onions and add to potatoes.
Add approximately 1/2 C champagne vinaigrette to the bowl and gently stir ingredients to coat well.
Refrigerate until ready to serve; enjoy!
