Easy, 4-Ingredient (No Bake!) Frozen Lemonade Icebox Pie

By total coincidence, in the days following my lemon icebox pie recipe shoot, I think I’ve seen photos of icebox pies pop up in my social feeds at least eight times. Are “they” watching or is everyone just really into icebox pies right now? My mom made this lemon icebox pie for dessert as the perfect complement to our fish fry dinner when Dave’s mom recently visited us and I knew I had to bring it to KN to share with you all. It’s not an original recipe, but is one that we always enjoyed in the past and has been in my mom’s arsenal of easy go-tos for years. This pie is delicious, no-bake, and best of all, only takes four ingredients to make! As an additional plus, no fancy kitchen prep tools are needed to create this delicious dessert. It’s so light and refreshing and is an awesome dessert to serve during the hottest summer months — so, you still have time 😉 It’s tart but sweet and is the best ending to barbecues, grilled dinners and summer suppers. Put it on your menu now or pin it for later — it stores and saves perfectly in the freezer and you can essentially eat off of it for weeks!

Lemon Icebox Pie (No Bake with Frozen Lemonade)

The perfect blend of sweet and tangy in a light and citrusy dessert pie. This recipe only requires four ingredients!

Ingredients

  • 1 pre-made graham cracker pie crust
  • 1 can sweetened condensed milk
  • 12 ounces frozen whipped topping
  • 6 ounces frozen lemonade concentrate -- thawed
  • thinly sliced lemon or lemon zest for garnish if desired

Instructions

  1. Gently mix the sweetened condensed milk and whipped topping in a medium mixing bowl with the rubber spatula.

  2. Gently fold in the thawed lemonade concentrate and incorporate until well-mixed.

  3. Spoon the mixture into the graham cracker pie crust.

  4. Place in freezer for at least four hours.

  5. Serve and enjoy!

    You can make this with any flavor of Koolaid. The lemon is my favorite! They have a peach/mango flavor that is great and you can mix in some peaches that you have cut up finely to give it a little more texture and “oomph”. It’s so easy and sooooo good! Everyone wants the recipe and think I’m lying when I tell them what it is.
